    68 days, 23 hours, and 19 minutes til Christmas!


    If you haven't already, it's time to start thinking about what your plans will be, planning for how you will pay for the extra expenses of the holiday season. If you're crafty or artistic, you might start planning projects and collecting needed supplies. This is also a great time to start exchanging recipes with others, maybe shake up the usual routine and try something new.


    If money is tight, start thinking about what you can sell or trade for new or gently used items that would make good Christmas/holiday gifts.


    It's also a good time to start collecting the change that you don't need, and putting it up. By the time Christmas/holidays are closer, you might have enough to cover some expenses/gifts.


    Oh, and don't forget we have several members who sell items that would be good for Christmas/Holiday gifts, whether they're Avon, TS, etc.

    CANDY CANE COOKIES

    1/2 c. butter (soft)
    1/2 c. shortening
    1 c. sugar
    1 egg
    1 1/2 tsp. almond extract
    1 tsp. vanilla
    2 1/2 c. flour
    1 tsp. salt
    1/2 tsp. red food color


    Mix butter, shortening, sugar, egg and flavorings. Blend in flour and salt. Divide dough in half, blend food color into half. Place on ungreased baking sheet, until lightly brown. Roll out small parts of cookie dough into a line (white and red dough) then curve like a candy cane.


    We break up candy canes and sprinkle the pieces on the top of the cookies, too.

    GLOGG -- SWEDISH CHRISTMAS PUNCH

    Glogg, which means "glow", derives its name from the glow which is created during the burning of the sugar over the drink, and the warm glow which it creates when imbibed.
    It is a traditionally served in the Swedish Christmas punch bowl and is appreciated as well by Danes and Finns as it helps to warm the cold climates during the long dark Winter season.


    It is often made exclusively of dry red wine, with the most potent ingredient, Aquavit, being omitted. Glogg spices, pre-mixed in convenient packages accompanied by instructions are sold in many Scandinavian delicatessen stores, but if you're not shopping in Nordic climes this Winter, it's easy to prepare your own using the recipe given here.


    1 bottle Claret, Burgundy, or other dry red wine
    10 cardamom seeds
    5 whole cloves
    3 pieces fresh or dried orange peel
    4 dried figs
    1 1/2" cinnamon stick
    1 cup raisins
    1/2 lb. sugar cubes
    1 cup blanched slivered almonds


    In a large decorative kettle, pour Claret, or wine. Add whole cardamom seeds, and orange peel. Poke holes into the figs with the cloves and insert them. Add the cloved figs, cinnamon sticks, and raisins. Stir in the almonds. Cover and simmer over low heat until the mixture just begins to boil, then remove from heat. Carry the kettle away from the stove.
    Place sugar cubes into an all metal sieve which has a long handle. Wearing a silicone hot mitt or other long-armed oven mitt, dip the sugar cubes into the hot liquid to moisten them. Light sugar with a match and allow to burn. Continue dipping sieve into liquid until sugar has melted completely into the glogg.


    Cover kettle if you need to put out the flame and when you are done. Put mixture through the sieve to strain. Cool.


    Keep in closed bottles.


    Heat glogg before serving, but do not boil. Serve hot in wine glasses with a few raisins and almonds in each glass.


    WARNING: Flaming alcohol can be dangerous! Never attempt this anywhere near a stove, especially one with a gas burner. Consider practice tests outdoors in a safe place where there are no children or pets until you become familiar with this technique, or alternatively, skip the step where the alcohol is lit and simply dissolve the sugar in the drink.


    This can be prepared and served successfully using a Crock-Pot.

    CHRISTMAS PUNCH

    4 cups cranberry juice
    2 32 oz cans pineapple juice
    1 cup freshly squeezed lemon juice
    3 cups sugar
    3 cups water
    2 2-litre bottles ginger ale
    Red food coloring (optional)
    12 oz. frozen strawberries


    Combine together all ingredients except the ginger ale and strawberries. Refrigerate. Just before serving, stir in ginger ale and strawberries. Add a few drops of food coloring, if desired (a little beet juice may be substituted for the red food coloring).
    Approximately 20 servings.

    Make Rice Krispie Treats using the normal recipe listed on cooks.com.
    green food coloring
    Red Hots or other small cinnamon candies
    thin red licorice string


    CHRISTMAS VARIATION: Add green food coloring to the mixture. Using buttered hands or a sheet of waxed paper, shape into wreaths and cool on waxed paper.
    Decorate with Red Hots to add some festive red. Thin red licorice can be twisted into a bow shape and added to the bottom.

    CHRISTMAS CHEESEBALL

    1 pkg dried beef
    1 pkg cream cheese
    bunch of green onions
    cayenne pepper to taste
    chopped pecans, very fine


    Chop dried beef very fine, chop green onions using 2/3 of greens very fine. Mix these two with softened cream cheese. Divide in two and roll into balls. Roll balls in chopped pecans. Serve with various crackers

    GRANDMAS CHRISTMAS TREAT

    1 container smooth peanut butter
    1 box round Ritz crackers
    1 block melting chocolate or vanilla


    Start by spreading peanut butter on Ritz crackers to make sandwiches out of them, making as many a desired. Melt chocolate or vanilla over medium heat or in the microwave. *Be careful not to burn!*
    Remove from heat. Using your hands or a fork, dip into melted chocolate until covered completely. Move to wax paper and let chocolate set then ENJOY!

    1 cup fresh cranberries
    1-16oz. pkg. frozen strawberries, thawed
    2 cups sugar


    Put cranberries in blender or food processer. Cover and chop by pulsing. Empty into a sauce pan; add strawberries (can slice if needed) and bring to a boil.
    Add sugar and boil until thickened. Pour into hot, sterilized jelly glasses amd seal.


    This can be doubled, just use a larger pot.


    Yeild: 5-4oz.or 21/2 8oz.jars.

    THE BEST CHRISTMAS CHEESCAKE

    2 pkgs Philadelphia cream cheese, softened
    1 small 8 oz. can (sweetened condensed milk)
    1 cup white sugar
    1 1/2 tsp of cinnamon
    1/2 cup egg nog (not fat free)
    2 tbsp Kahlua
    1 graham cracker crust


    Set cream cheese on counter for about 2 hours, until it is softened.
    In a large mixer, combine all ingredients, beating for 2 minutes on high speed. Allow to sit in the refrigerator in the bowl it was mixed in for 2 hours.


    Remove from refrigerator, pour into crust and bake at 350F degrees for 45 minutes.


    Refrigerate 5 hours or more. Cut into serving slices or eat the whole thing all by yourself. I have before. This is a very secret pie never released until now. I can't keep it inside anymore. Enjoy!!!


    Editor's Note: For additional texture, you can optionally add an egg yolk while mixing.

    HEAVENLY MASHED POTATOES (CHRISTMAS COLORS)

    1 bag red potatoes 5 lb (or potatoe of choice)
    3/4 of a 16 0z container of onion sour cream (give or take)
    1/4 cup parsley (give or take)
    1 stick salted butter (give or take)
    3 tablespoons coarse black pepper (give or take)
    2 tablespoons coarse kosher salt (give or take)


    Leaving skins on the potatoes, wash them well. Large potatoes can be cut into quarters; smaller in halves. Bring a pot of salted water to a boil. Place potatoes in the ater and cook until fork tender. Strain water and leave potatoes in hot pot to dry.
    Add the butter and sour cream.


    Using a masher, blend all ingredients. Add parsley, salt, pepper; blend with masher. According to taste, mash to consistency desired. For creamiest potatoes, use a wand blender inserted in pot. Add more butter, sour cream, or spices to taste.


    Serve as is or place potatoes in casserole dish and bake until top is golden brown and crunchy in a 425 degree oven.

    EGG NOG

    12 eggs, separated & beaten
    1 c. sugar
    1/4 tsp. salt
    1 tsp. vanilla
    2 tsp. nutmeg
    8 c. milk
    1 c. dark rum or brandy


    Beat yolks and sugar until light and thoroughly combined. Add salt and vanilla. Beat in 4 cups milk. Cook mixture, stirring constantly until it reaches 170 degrees on a candy thermometer and thickens slightly (do not boil). Remove the custard from heat and stir in 4 more cups milk. Beat whites of eggs and 1/4 cup sugar. Fold into egg and milk mixture. Add nutmeg and 4 quarts of store bought egg nog and mix thoroughly. Add rum or brandy to taste. Makes about 2 gallons of delicious egg nog.

    Saltdough Christmas Ornaments: Classic Salt Dough Ornament Recipe


    Ingredients:
    2 cups flour
    1 cup salt
    1 cup hot water


    Christmas Cookie Cutters
    Acrylic Paints
    Glitter, beads, buttons and other "accessories"
    Mod Podge for preservation


    Directions:
    1. Mix salt and flour.
    2. Add in half the water, then gradually add the remaining water.
    3. Knead until the dough is smooth, this can take up to 10 minutes.
    4. For flat dough ornaments roll out the dough on baking paper…or be creative and make odd shapes and wreaths (takes longer to bake)


    Create:


    Use cookie cutters, cut-out templates, or just use your hands. (I used the cookie cutters that add the detail lines into the dough when you press it down, just ‘cuz that’s what my mom used when I was a little girl!) This dries out quickly and doesn’t save well–so work quickly and only make as much as you’ll use. I’m not sure how many this recipe makes because it changes with the size of the cookie cutters/shapes used.


    Don’t Forget:Use a straw to make a hole so you can hang the ornament!


    Temperature: 325 degrees


    Time: 1 1/2 hours - or until dry


    Decorate:


    Let cool before you begin. Paint with acrylic paints. Glue on beads, buttons, or any fun accessory.


    Preservation:
    Coat with mod podge when everything is dry.

    I used to do Christmas baking for friends that either worked or just didn't like to bake. I love baking and while I was doing my own, it was no problem to make extras for them. LOL...I charged less than the bakeries but still made some extra Christmas money doing it.

    Stormy, I used to do lots of baking. I'm hoping I will be in a diff place by the holidays, so I can bake some Christmas cookies and other things!

    Christmas Fudge
    Ingredients:
    1 cup sugar
    1/2 cup butter
    1/2 cup heavy cream
    1/8 tsp salt
    2 cups powdered sugar
    1 tsp vanilla
    1/2 cup red candied cherries, chopped
    1/2 cup green candied cherries, chopped
    Directions:
    1. Spray an 8x8" baking dish with cooking spray.
    2. In a large saucepan, bring the sugar, butter, cream and salt to a boil over medium heat, stirring
    frequently. Let boil for 5 minutes, stirring constantly. Remove from heat and slowly add the powdered
    sugar and vanilla, stirring until smooth and well combined. Stir in the cherries until evenly
    distributed.
    3. Spoon into baking dish and chill for 1 hour or until firm. Cut into squares. Store in an airtight
    container.

    ITALIAN KNOT COOKIES (CREAM CHEESE)


    1 8 ounce package cream cheese, softened
    2 sticks butter, softened
    1 cup sugar
    4 eggs
    2 teaspoon vanilla
    5 teaspoons baking powder
    5 cups flour (approx)


    Icing:


    powdered sugar
    water
    anisette extract (or whatever flavoring you prefer)
    food coloring, if desired
    sprinkles


    Sift flour and baking powder. Set aside.
    In a large bowl combine cream cheese, and butter with mixer. Add sugar and beat until smooth and creamy. Add eggs and vanilla and continue beating until fluffy. Add flour mixture. You will have to stir by hand at the end because it will be too stiff to beat with the mixer.


    Form dough into a large ball and let set for a few minutes. If dough is too soft, you can add more flour, a little at a time. Shape small pieces of dough into knot shape by rolling between hands into a rope and twisting into knot shape.


    Bake on ungreased cookie sheet at 350°F until lightly browned on bottom. DO NOT OVERBAKE. Cookies will not be brown on top when done. Only the bottom.


    Cool on wire racks and dip into icing. Dust with sprinkles. Let dry on sheets of waxed paper.

    MAPLE FUDGE


    Mix together and stir:


    1 cup sugar
    1 cup brown sugar
    2 teaspoons vinegar
    1/2 cup maple syrup
    1/2 cup water


    Place over medium heat and boil slowly, washing down sides of pan often. Cover with lid for one minute. Cook to 228°F. Cool in pan.
    When cool, beat until it loses it's gloss and becomes fudge like. Add maple flavoring to taste, if desired, and 1/2 cup chopped nuts.


    Pour into a buttered 8 inch square pan. Allow to cool until set.

    Peppermint Creams
    Makes 20 Creams
    From the kitchen of Amanda. F


    8oz (225g) icing sugar sieved
    1 egg white
    few drops peppermint essence
    few drops green food coloring (optional)
    3.5oz (100g) bar of dark chocolate melted
    1 supercook writing pen (optional)


    Weigh out the ingredients and make sure the melted chocolate will be cool enough for the children to handle. Put greaseproof paper on a board and the children begin. 1. Put the Icing Sugar in a bowl and mix in the egg white to form a stiff paste. Add a few drops of peppermint essence and food colouring, if using. 2. Kneed the mixture in the bowl to make sure all the icing sugar is mixed in. Put the dough on a work surface and roll it out to 1/4 in (1/2 cm) thick. 3. Use a plain cutter to stamp out small rounds, then transfer them onto greaseproof paper. 4. To decorate, dip the creams in the melted chocolate to half cover them or use the writing pen to ice hearts or anything else you can think of. Leave to set for a few hours.
